PEEPS® Easter Bunny Rainbow Cake
Create an Easter Bunny Rainbow Cake with layers of strawberry and lemon cake filled with creamy vanilla frosting and decorated with PEEPS® Marshmallow Bunnies and PEEPS® Jelly Beans.
INGREDIENTS
- PAM® Baking Spray
- 1 pkg (15.25 oz each) Duncan Hines® Signature Strawberry Supreme Cake Mix
- 1 cup water
- 3 eggs
- 1/3 cup vegetable oil
- 1 pkg (15.25 oz each) Duncan Hines® Signature Lemon Supreme Cake Mix
- 1 cup water
- 3 eggs
- 1/3 cup vegetable oil
- 2 containers (16 oz each) Duncan Hines® Classic Vanilla Creamy Home-Style Frosting
- 24 PEEPS® Brand Marshmallow Bunnies, solid color or assorted colors
- 1/2 cup PEEPS® Brand Jelly Beans
- 2 tablespoons rainbow sprinkles
INSTRUCTIONS
- Preheat oven to 350°F. Spray 2 8-inch round pans with baking spray.
- Beat strawberry cake mix, 1 cup water, 3 eggs and 1/3 cup vegetable oil in large bowl with an electric mixer on low speed until blended, about 30 seconds. Beat on medium speed 2 minutes. Pour into pans and bake 24 to 29 minutes, until toothpick inserted in center comes out clean.
- Cool on wire rack 10 minutes. Invert cakes onto rack, wash and dry pans, spray with baking spray.
- Beat lemon cake mix, 1 cup water, 3 eggs and 1/3 cup vegetable oil in large bowl with an electric mixer on low speed until blended, about 30 seconds. Beat on medium speed 2 minutes. Pour into pans and bake 22 to 27 minutes, until toothpick inserted in center comes out clean.
- Cool on wire rack 10 minutes. Invert cakes onto rack and cool completely.
- Place one cake layer on serving plate. Frost with about 1/3-cup frosting. Alternate cake flavors and layer with frosting. Frost entire cake with remaining frosting. Decorate with PEEPS® Marshmallow Bunnies and PEEPS® Jelly Beans and sprinkles. Slice and serve.
